Has anyone done an aftermarket dash cam? any recommendations on brand? wiring path around the windshield /dash that doesnt look terrible?

I installed a Vantrue S1 with front and rear cameras in ours. No problem tucking wiring under panels without having to remove any trim. They included a plastic tool to do this in the kit that I found after I finished the install. I haven't purchased the extra wiring kit yet to get power all the time to be able to use the parking feature. May do that in the future. The included cigarette lighter plug works fine for power when the car is running.

Look into the dash cam adapter from Dongar Technology if you have an auto dimming mirror. It gets it’s power from rear view mirror, easy and no-wiring job.

Works flawlessly. Simple install and buy a dash cam that can trigger on it's own battery for when you are parked if that feature is something you want.

I installed the Rove 2 Dash Cam and powered it from my rearview mirror using the Dongar adapter. As previously stated, you need to have an auto dimming mirror. Total install time < 10 minutes.

I have the BlackVue DR900X-2CH Plus with LTE module, and a couple of batteries for parking mode. The installation isn't all that hard (hiding the rear dash is the worst part).

As for recommendations, it depends on what you are looking for. I went high price for the LTE, WiFi, and a few other features this model gave me more than anything, but I recommend watching the linked video. That explains why almost all dash cams are the same (other than added features).
